THE PRODUCER
Founded by the husband and wife duo of Tami and Will Nguyen, Great Cherry seeks to elevate the quality and perception
of fine robusta, operating under the core belief that much of its inferior reputation has to do with lack of investment and
poor industry alignment. By working with individual farmers to improve practices at the farm level, refining processing in
their own centralized facility, and marketing their efforts to quality-focused buyers around the world, the overall goal is to
meaningfully elevate not only the quality and reputation of robusta itself, but to empower robusta farmers as well.
THE PROCESS
For this lot, ripe cherries underwent anaerobic fermentation before being dried on raised beds until they reached the desired moisture contet.
WHY WE LOVE IT
Robusta often is looked down upon in the specialty coffee world, and many producers in Vietnam are hoping to change that. We've worked with several robusta lots and have been impressed by how the processing methods draw out sweetness from the varietal. This coffee is full bodied, with deep notes of chocolate, cherries, and ginger spice.
