THE PRODUCER
Gold Mountain Coffee is made up of a group of farmers dedicated to producing high quality specialty coffee. Every coffee is traceable down to the sugar content of cherries and weather on each farm during days of picking.
THE PROCESS
The team at Gold Mountain using a multi-step sorting process to select perfectly ripe cherries for their natural lots. The cherries are rushed down the mountain in special boxes with air flow to dry on raised drying beds. They are consistently moved to ensure even drying. Cherries take about 34 days to dry in the sun.
This lot is a pacamara varietal. Pacamara beans are known for being exceptionally large and for having a lighter density than most beans. Often this means they take a little longer to move through a grinder and require a more fine grind size. Pacamara is a low yield variety known for its sweetness and high cup quality.
WHY WE LOVE IT
Brix Breaker is the perfect way to describe this coffee and the juicy, slightly tart sweetness it brings. The brix scale is used to measure sweetness and is commonly associated with winemaking, but is used among coffee producers to track the optimal sweetness for processing. In the cup, we're tasting strawberry lemonade, hibiscus, and pineapple juice.
