THE PRODUCER
Maximino Palacio and his wife Marlene own Santa Adela, a farm in Jinotega, Nicaragua. Gold Mountain Coffee Growers selected their cherries for carbonic maceration natural processing because of their attention to detail in picking perfectly ripe cherries.
THE PROCESS
The cherries for this lot are picked in the morning and then driven the 2-3 hour journey to Finca Idealista, the processing hub for Gold Mountain Coffee Growers. The processing for this coffee is whole cherry double fermentation in an anaerobic environment. Total fermentation time for this lot is 118 hours.
WHY WE LOVE IT
From picking to processing, the sweetness and Brix levels are monitored throughout each step of this coffee's journey. The processing results in a full and effervescent cup with tropical notes of guava, pineapple, and passion fruit.
