THE PRODUCER
Maritza and Francisco Javier each own separate plots of land, which is somewhat rare for a farming couple (in most cases the male head of household has all the land in his name). Maritza has a strong and fun personality and they both enthusiastically show visitors their farms.
THE PROCESS
This double-fermentation carbonic maceration natural is fermented at Finca Idealista for precise monitoring of pH and brix readings. The total fermentation time for this lot is 175.25 hours. After whole cherries are fermented in a barrel both without and with water, the cherries are put out to dry in the sun for just over a month.
WHY WE LOVE IT
This coffee is effervescent, sweet, and playful on the palate. The carbonic element of the processing brings a lightness that highlights the tropical sweetness of this coffee. We're loving pour overs of this coffee both hot and iced.
