THE PRODUCER
Finca Idealista is the flagship farm of Gold Mountain Coffee Growers. The farm is an example for coffee production, and source of seeds, for member farms. Idealista's cool microclimate lengthens the coffee cherry maturity process, allowing beans time to absorb natural sugars and attributes for a sweet, complex cup.
THE PROCESS
Finca Idealista partnered with yeast experts from the wine and beer industry to experiment with yeasts and anaerobic fermentation processes. The Kveik yeast has been used for decades in Norway but is not a common yeast in coffee processing.
This lot underwent 113 hours of anaerobic fermentation with the Kevik yeasts added.
WHY WE LOVE IT
This lot underwent almost five straight days of anaerobic fermentation. The addition of the Kevik yeast supercharged the coffee's fermentation and development of sugars. This coffee has an effervescent and creamy mouthfeel with bright sweetness of yuzu and raspberry.
