THE PRODUCER
Selin carries on his family's farming tradition with admirable dedication, taking care of not only his own land but also that of his family. Alongside his wife, Blanca, who is a cupper, Selin Jr. upholds the longstanding legacy of exceptional quality and sustainable practices that originated in La Labor, leaving an indelible mark on the agricultural landscape.
THE PROCESS
This maragogype lot was harvested between February and April 2025 at elevations ranging from 1550 to 1675 MASL, where a dedicated team of 10 pickers carefully selected cherries exclusively at a deep red
color, ensuring 100% peak ripeness, a crucial requirement for maintaining the delicate structure and sweetness of this variety.
It was processed using a honey method, with no pre-fermentation stage involved. Additionally, the lot underwent an intentional two-step manual selection: first at the cherry stage, and again in parchment.
Drying took place on patios under full sun for a total of 18 days, consisting of 8 days of active sun-drying followed by 10 days of
resting, allowing moisture to stabilize gradually. The coffee was dried to 10.5% moisture with a water activity of 0.59, ensuring long-term stability and optimal preservation.
WHY WE LOVE IT
This delicate and floral lot was carefully processed to ensure only the ripest cherries were selected. The result is emblematic of the maragogype varietal: delicate sweetness and florality with an elegant finish.
