THE PRODUCER
Finca Las Moras is located in Guajiquiro, La Paz, Honduras, and is managed by Heber Hernán Ávila, a 39-year-old, third-generation coffee producer. The farm, named after the delicious blackberries (“moras”) grown in the area, spans approximately 4.2 hectacres at elevations of 1600–1800 MASL. Here, Heber cultivates IHCAFE 90 and Catimor varieties.
Heber Ávila began his coffee journey two decades ago, following in the footsteps of his father and grandfather. While part of Finca Las Moras is family inheritance, Heber expanded the family farm by acquiring nearby land.
With a sustainable approach to coffee growing, Heber supervises every step of the way, ensuring nothing goes to waste and reducing the farm’s water consumption.
THE PROCESS
For this honey lot, cherries are de-pulped and immediately laid to sun-dry for 9-12 days, with constant movement to ensure an even drying.
WHY WE LOVE IT
Herber is very attentive to his farm and his care for each part of the process shows in his coffees. This is a coffee that is sweet and balanced with notes of raspberries, caramelized sugars, and a chocolate finish. On espresso this coffee shines with or without milk.
