THE PRODUCER
The Danche Station is in the Chelbesa village of the Gedeb Zone in Ethiopia and managed by SNAP Specialty Coffee. The approximately 800 farmers that deliver cherry to this washing station, come from the region and have between 2 and 3 Ha of land sitting at an elevation of 2200 masl on average. This lot consists of the Kurume and Wolisho varieties.
SNAP Coffee is The Coffee Quest's producing partner in Ethiopia. Founded in Addis Ababa by Negusse in 2008, SNAP operates 7 washing stations in key coffee-producing areas like Sidama, Yirgacheffe, and the Guji Zone. SNAP focuses its operation on three fundamental pillars – consistency, education, and sustainability. It is within their purpose to improve the livelihood of supporting farmers, and last year their team of agronomists trained more than 6,000 farmers in land and nursery management and climate-smart agriculture through crop diversification and intercropping.
THE PROCESS
Once cherries arrive at the station, they are placed in water for sorting and removing floaters. For the natural lot, the whole cherry is left to dry-ferment in tanks for 3 days and later placed in raised beds to sun-dry. The cherries are constantly moved each day, taking 16-21 days to fully dry.
WHY WE LOVE IT
The Chelbesa area of Ethiopia is a new origin for us within the country, and this lot is distinct in its profile. We're tasting playful, tropical notes that are effervescent and sweet.
