THE PRODUCER

The Bashiro Gute Station is in the Gute village of the Bona Zurida district in Sidama, Ethiopia. Many farmers from the Gute area bring their cherries to the station, which for this lot are the 74158 varietal.

THE PROCESS

Once uniformly ripe cherries arrive at the Bashiro Gute station, they are immediately laid out on African drying beds, where they are carefully dried over an average of 25 days. To ensure even drying, the cherries are turned every hour and covered with shade between 12–3 PM daily to protect them from direct sunlight. When the cherries reach a moisture level of 10–11%, they are sealed in GrainPro bags to enhance and preserve their aroma. The coffee is then stored in jute bags and rested for a minimum of 45 days before dry milling.

WHY WE LOVE IT

The fruit flavors in this coffee are simultaneously bold but finish with delicate notes of melon and stone fruit. At first, berry sweetness hits the palate before making way for nectarine and honeydew notes.
