THE PRODUCER
The Kokose station is in the Bensa area of Sidama, Ethiopia. This station receives cherries from smallholder farms in the area. Basha Bekele owns six washing stations in the area of Bensa.
THE PROCESS
Ripe, red cherries are selectively handpicked by grower farmers and delivered to the Kokose station.
The Kokose station employed a natural drying process for this lot, which requires frequent stirring to avoid the growth of mold and takes 3-5 weeks to dry based upon climatic condition.
WHY WE LOVE IT
This coffee is well balanced, with a cranberry tartness up front that gives way to a sweet and sugary finish. It balances the brightness we love from natural Ethiopias with a comforting sweetness that makes this a perfect coffee to start the day with.
