THE PRODUCER
The Banko Gotiti Washing Station is in the small town of Banko Gotiti in Yirgacheffe, Ethiopia. Smallholder farmers from the area bring their cherries to the washing station for processing.
THE PROCESS
For this lot, whole cherries are placed in airtight containers. Fresh pineapple is added to the cherries and the mixture ferments anaerobically for ten days. Temperature is closely monitored and is kept between 59°-64°F. The coffee is then dried on raised beds for around three weeks.
WHY WE LOVE IT
The metabolizing of the sugars in the coffee cherries alongside the sugars in the pineapple creates a sweetness that is tropical with an almost baking spice finish. This is a harmonious co-ferment that we'll be sipping all day long.
