THE PRODUCER
Fatima is a wet mill located in Tobosi, Costa Rica. The mill was bought 43 years ago by Mercurio Industrial. In 2020 the mill began processing specialty coffee.
In the past two years, Fatima has built one of the nicest wet-mills and anaerobic stations in the country. They are now also purchasing cherries from other farmers in the community of Dota in order to process more micro lots.
THE PROCESS
After collecting only the ripe cherries by hand, they take them to their wet mill where the cherries are floated to remove impurities. For this anaerobic lot, they let the fruit rest in the fermentation tanks for 2 days before drying. Then, they move the cherries to the patios to pre-dry, turning the coffee evenly for 15 days inside of a greenhouse before finalizing the drying on mechanical dryers at low temperatures.
WHY WE LOVE IT
This lot is marked by bright fruit notes of strawberry, cherry, and orange. The anaerobic processing on this coffee gives it a bit of tropical funk at the finish.
