THE PRODUCER
Asosatus is an associative group made up of 70 coffee-growing families. The group is obsessed with innovation, constantly informing themselves about the different technologies that can be applied to their coffees. They are faithful believers of the purist processes that help them to highlight the best of each varietal. Their mark is in the quality of each lot that they send out. They want their coffees to be recognizable and for the quality to shine through in each sip.
THE PROCESS
This coffee is a blend of multiple varietals grown by the farmers of Asosatus. The coffee undergoes 48 hours of fermentation where the coffee is immersed in water. This twist on a natural process lets the sweetness in the coffee shine through.
WHY WE LOVE IT
We have had several coffees produced by Asosatus and this one is notable for the water immersion aspect of its processing. We're tasting notes of mango candy, fruit punch, and star fruit. This is a bright and sweet coffee that shines on pour over and as espresso.
