THE PRODUCER
SATUS is a group made of 70 coffee-growing families. These families are relentless in their pursuit of quality and innovation in specialty coffee. Together, they share knowledge and resources to push their project forward.
THE PROCESS
This coffee undergoes 48 hours of double fermentation. The cherries are first floated for density before undergoing 24 hours of oxidation in whole cherry. Following this, the cherries are de-pulped before fermenting for 24 hours in parchment.
After fermentation is complete, the coffee is slow dried on patios for 25 days before being placed in GrainPro bags to stabilize for 62 days.
WHY WE LOVE IT
We love geshas for their delicate complexity and beautiful sweetness. The double fermentation of this lot highlights notes of chamomile, lemon cake, and agave.
