THE PRODUCER
SATUS is a group made of 70 coffee-growing families. These families are relentless in their pursuit of quality and innovation in specialty coffee. Together, they share knowledge and resources to push their project forward.
THE PROCESS
For this lot, the cherries are first floated for density. Following this, the cherries are de-pulped before fermenting for 48 hours in parchment.
After fermentation is complete, the coffee is slow dried on patios for 10 days before being placed in GrainPro bags to stabilize for 90 days.
WHY WE LOVE IT
The fermentation in parchment for this coffee helps deepen its sweetness. The bright and full notes of mandarin orange and peach blossom shine through in the first sip, with a clean and crisp finish reminiscent of cane sugar.
