THE PRODUCER
SATUS is an associative group of coffee-growing families in Huila, Colombia. The families work together to support each other through farming and community.
THE PROCESS
Sidra is a varietal that shares genetic associations with bourbon varietals. It is not believed to be a pure bourbon, but rather is related to Ethiopia landraces or other unidentified varietals.
This lot underwent 48 hours of water-immersed fermentation being slow-dried on beds for 20 days. The beans were then stabilized in GrainPro bags for 14 days.
WHY WE LOVE IT
This natural lot underwent careful fermentation and stabilization from the producers of SATUS. The result of this water fermentation and natural processing is a cup that is juicy and sweet with cherry and mango notes up front.
