THE PRODUCER
The coffee comes to Torch Coffee from Menglian (both a small city and the name of the autonomous Menglian Dai, Lahu, Va region) in Yunnan, China. This lot comes from a local co-op.
THE PROCESS
Cherries are sorted, floated, pulped and then bed dried with frequent turning and temperature checks. This lot is subject to a lot less fermentation on the front end, leading to a really smooth, stable profile that showcases the citrus notes and creaminess that are hallmarks of the region in properly processed coffees.
WHY WE LOVE IT
This coffee shows the citrus notes and dynamic acidity that we've come to love from Yunnan coffees. The processing adds another layer of complexity and a creamy mouthfeel to the coffee.
