THE PRODUCER
Yuan Xue Long is a coffee farmer in the Long Tan township of Yunnan, China. Around 6 years ago he came to a processing class hosted by Torch Coffee in Yunnan. Torch had fallen out of touch with him until about 3 years ago when he ran into a member of the Torch team at a dry mill. They reconnected and cupped coffees together and have been working together ever since.
THE PROCESS
This natural processed lot underwent selective picking and floating for density before being dried on raised beds.
WHY WE LOVE IT
We always get excited when we see a new producer from Yunnan and this lot has definitely delivered. In the cup there's a balanced sweetness and pleasing acidity that shine on both pour over and espresso.
