Black Sheep is a lot processed by Torch Coffee and is comprised of cherries from smallholder farms in Manxieba, Yunnan, China.
THE PROCESS
Black Sheep is an experimental coffee that features a 30-day anaerobic fermentation, an initial drying period to 35% moisture, an additional sealed 20-day fermentation and a final drying to 10-12% moisture.
WHY WE LOVE IT
The detailed double anaerobic processing on this lot leads to a rich and funky sweetness. This coffee has been one of our favorites because of its unique processing and profile. We love it so much that we featured it in our current run of single origin nitro cold brew cans :)
