THE PRODUCER
Finca Las Moras is located in Guajiquiro, La Paz, Honduras, and is managed by Heber Hernán Ávila, a 39-year-old, third-generation coffee producer. The farm, named after the delicious blackberries (“moras”) grown in the area, spans approximately 4.2 hectacres at elevations of 1600–1800 MASL. Here, Heber cultivates IHCAFE 90 and Catimor varieties.
Heber Ávila began his coffee journey two decades ago, following in the footsteps of his father and grandfather. While part of Finca Las Moras is family inheritance, Heber expanded the family farm by acquiring nearby land.
With a sustainable approach to coffee growing, Heber supervises every step of the way, ensuring nothing goes to waste and reducing the farm’s water consumption.
THE PROCESS
For the Natural lot, cherries are harvested at their ripest and dry-fermented for 48 hours. They are then laid to sun-dry on raised beds (sarán) for 15–18 days with constant movement.
WHY WE LOVE IT
This is the second coffee we've had from Finca Las Moras this year and we're loving the depth of flavor in this natural lot. We're tasting rich pastry sweetness and notes of cherry, almond, and cocoa nibs.
